Iced Peach Ginger Tea

  • 1 peach, sliced and pitted
  • 3 cups water
  • 4 cut ‘coins’ of fresh ginger
  • 1 tsp (or 1 tea bag) white or green tea – can be decaf
  • Honey to taste

Bring water just to a boil. Turn off heat, add ginger, peach and tea bag. Close lid. Steep for 15 minutes, then remove tea bag. Leave fruit and ginger for 2 hours, then remove. Add ice and honey to sweeten to taste.


Ginger is legendary as a medicinal plant, particularly well known as a carminative – it helps to relieve gas from the stomach and intestines and relieves abdominal pain. It is widely used to reduce or even prevent nausea, both due to illness and motion sickness. The best thing about ginger is it can be taken in so many forms. When travelling it can be carried as a small candy, or dried pieces that are crystallized with a bit of sugar, as a liquid bitter which can be added to water, juice or directly under the tongue, or even as an essential oil which could be smelled directly on a ball of cotton. Ginger can also stimulate the circulatory system, promoting sweating, potentially lowering cholesterol and lowering blood pressure.
