'Provence' lavender is one of the most popular lavenders for commercial production. It is an extremely robust grower, with greyish-green foliage. Light lavender-violet flowers with greenish lavender calyces dry to a lavender/gray. This lavender 'shatters', meaning once it is dry the flowers fall off the stems easily. This is a great feature if you are cleaning the lavender for sachets.
'Provence' lavender is one of the fastest growing lavenders in the trade. It will grow to 30 inches in one year, and will bloom heavily in the early summer, and if you prune it back after bloom will re-bloom in the mid fall.
'Provence' is not considered to be acceptable in the production of essential oil, but it is excellent for sachets, lavender wands and bouquets. It is very strong flavored, so if used in cooking it should be used sparingly. Stems and flowers are often added to the last few minutes of a barbecue to add flavor to beef or pork.
