'Violet' artichokes grow to about 4 ft, producing large deeply cut gray green leaves. The flower buds start a deep violet, and when they are ready to harvest they are a greenish-violet. The flavor is similar to standard artichokes, but finer - less strong and lacking in bitterness. Flowers are produced abundantly, especially if ample water is applied, and compost and slow release fertilizers are incorporated in at planting time.
