Green Globe artichokes produce a sturdy plant, growing to 4 feet tall and as wide. They will begin production the first year of planting, producing artichokes between 3-5 inches. For the best production, give plants ample water. As a landscaping plant, artichokes will tolerate far less water. Harvest artichokes when the flowers are just opening - if you leave them too long the flowers will produce a purple bloom that are inedible, but great for crafting
