Roselle, also called Jamaica (j is pronounced like an h) is used for refreshing teas and medicinal tonics. The calyx, which is a waxy deep red, is dried and used to produce a deep red colored drink - even without sugar it adds a pleasant sweetness and a brilliant red color. Three plants generally yield about 1/2 lb of dried calyces. The growing tips and young leaves can also be eaten, and are often used in jelly making - about 3% of their weight is natural pectin. Leaves and flowers are high in vitamin C.
