Chervil is sometimes referred to as 'the gourmet's parsley'. It has a celery like flavor with undertones of licorice. Chervil has fern like foliage that grows similar to dill. It prefers shady conditions where summers are hot, but in cooler climates can grow in full sun. It is an annual and needs to be replanted each spring. Use with fish, soups, eggs, asparagus, potatoes, and as a salad green. It is a component of 'fines herbes'. Plant in a rich soil and supply with adequate water and fertilizer high in nitrogen.
